Stonebeck Cheese Wensleydale

Stonebeck Cheese Wensleydale is a unique product celebrating elements of landscape, cultural heritage, sustainability, conservation and biodiversity. Their vision is to revive an arguably extinct British Territorial cheese in a sustainable way.

Ingredients: 

1. Raw milk from Stonebeck herd. Being unpasturised, the milk retains its own character - reflecting the cow breed, environment, diet and the native microflora unique to Low Riggs Farm: the terroir.
2. Traditional starter culture is a mix of lactic acid-producing bacteria that promote acid development in the cheese.  They only add small amounts to augment the flora naturally present in our raw milk.
3. Rennet sets the milk, creating curds and whey, the solids and liquid respectively.
4. Pure salt
