Ethical Dairy Cheese - Skinny Red

With its beautiful deep colour, smooth texture and slightly nutty flavour notes, this is a traditional red farmhouse cheese made with milk with a lower fat content.

Why skinny? It’s because the way Ethical dairy manage their herd means there’s a seasonal cycle to the composition of the milk, and what fluctuates most is the butterfat content. During January and February the butterfat content of their milk is so low that they can't make their usual cheeses so they make Skinny Red instead!

Made with unpasteurised milk from their cow with calf organic dairy farm.
